I couldn't stop eating it. *Start sugar pie pumpkin before you begin pie* Ingredients for pie crust 1/2 cup whole golden flax 1/4 cup coconut flour 1/2 cup shredded coconut 1 egg 2-3 tablespoons cubed grass-fed/ raw butter Instruction for pie crust * Grind flax * Grind shredded coconut * Mix all dry ingredients together * Add egg and cubed butter * Butter your pie dish really well * Press pie crust into pan Ingredients for pumpkin pie 1 sugar pie pumpkin 1/4 cup maple syrup 1 heaping tbs pumpkin pie spice 1 tbs arrowroot 1 tea salt 2 tea vanilla 1 cup cream cheese or coconut milk 3 eggs Instructions for pumpkin pie * Cut sugar pumpkin in half, scoop out seeds and roast cut side down at 375 for 30-60 mins. Its done when you can easily put a fork in it and it feels soft. Remove from the oven and let cool while you prepare the rest.
* Scoop out pumpkin and combine all wet ingredients, use a blender so its a bit frothy * Combine dry ingredients * Combine the wet and dry ingredients * Bake in the oven at 350 for 40- 6o mins. The edges should be firm and the center a little wiggly. I served it with some homemade raw and coconut milk ice cream. *blessings*

10/18/2012 2 Comments Riding lessonIt was a sunny, cool fall morning with a fog still heavy in the air. We started with ground work. Asking him to work out his stiff muscles and pay attention to my requests. After a little coaxing he was happy to be working again. An ex barrel racing horse, worked hard and long. Now he is just being asked to trot and walk and stretch out his legs, he obliges. With the saddle on i ask him to bare with my inexperience and stick with me. I don't have plans to show him or race him, all i want is to feel comfortable on him so we can ride trials and i can see the forest from his eyes. Horses are a mighty animal, fierce and strong but under the hands of a knowledgeable rider they are safer than any ATV and much more peaceful. My goal is to be that rider.
This morning was my first official riding lesson. Pete did great. Hes such a good boy. Its amazing how working with another animal, getting over your fears and theirs can boost your confidence. I could tell how proud he was of himself. Human beings fate has been intertwined with horses and all other animals for that matter, for centuries. We need each other. He was just as proud of his hard work as i was. I could see the spark in his eye return after a few requests to do tasks he forgot, and remembered. My friend and trainer kelsie was there boosting my confidence and his. Making me feel like i could sit out those little hiccups, where normally i would doubt myself. Wonder what i was doing wrong. Why he wasn't turning or trotting when i asked him. Doubt would creep into my mind. This is why i love farming so much. The tasks i do on this farm translate into so many other parts of my life. What, from the outside, appears as just a woman and her horse is actually a deep spiritual journey. How to overcome our fears and build confidence and faith in ourselves. It was our first jump into farming. 80 acres, trails, horses and all sorts of other wild beasts:) God am I grateful for that experience.
Its getting close to Halloween and for many that means high fructose laden candy and itchy polyester costumes. For my family it means the celebration of harvest, the coming of winter and the remembrance of loved ones. This is when we begin to see the cold hand of Autumn touch nature. This is a time of death. Like most other holidays that were once about family and connection and had deep meanings, we have sensationalized and turned this time for reflection into a gimmick. Halloween isn't about the stuff, its actually about losing the "stuff". This is when crops are dying, animals are culled that wont survive the winter, wood, food and supplies are being harvested and stored, leaves are falling, the days are getting shorter, animals are scurrying to gather their food for winter, and the thermometer drops outside to make baking inside comfortable. This is my favorite time of year. I made this cake to satisfy that sweet tooth craving and it has some pumpkin pie spices in it. I made sweet cream to top it off with, you don't need to do that. Ingredients 1/4 cup raw cacao powder 1/2 cup golden flax seed, whole 1/4 tea of baking powder 1/2 cup of chocolate chips (i like these chocolate chips, they are soy and gluten free) 5 oz cream cheese 1/4 cup maple syrup (I actually only used 2 tbs and it was pretty good but needed the sweet cream) 1 tbs vanilla 6 eggs 1/2 cup almond butter 2 tea pumpkin spice blend i like this if you want to make your own pumpkin pie spice blend 1/4 tea of baking powder Instructions * grind the flax seed in your coffee grinder
* combine all the dry ingredients in one bowl * in another bowl place the cream cheese with the other liquids and blend * add the liquids to the dry ingredients and mix * butter pan really well * pour the mixture into a cake pan, i used a bunt pan because i think they are neat, but any glass, stainless steel, clay or porcelain baking apparatus will work. * bake in oven at 350 for about 30 mins- 1 hour, it took about 45 mins in my bunt pan but i kept checking it, its done when a knife comes out clean. Ingredients
1/2 cup whole flax seed (i like the golden) 1/8 tsp baking powder (optional it makes it thicker) 4oz cream cheese (make your own) 3 eggs 2tsp vanilla Maple syrup or honey Blackberries (or other fruit in season) Butter Instructions * Grind flax seed- i use a coffee grinder * Crack the eggs into a bowl with the cream cheese and vanilla blend them together- i use my immersion blender * Add the baking powder to the flax * Mix flax with the liquid mixture * Warm a pan over medium heat with some butter or coconut oil * cook till light brown brown on both sides * Top with warmed berries, butter and maple syrup or honey *Blessings* |
